Doomsday Chili

- 1 1/2 tablespoons olive oil
- 1 large onion, roughly chopped
- 5-6 cloves garlic, finely chopped
- 12 jalapeno peppers, seeded or unseeded (to taste), chopped
- 1-2 serrano peppers, chopped
- 2 1/2 pounds lean ground beef (Use a meat substitute to keep this vegetarian)
- 1 (15 oz) can kidney beans
- 1 (15 oz) can black beans
- 1 (8 oz) can tomato sauce
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 1 tablespoon oregano
- 1 teaspoon cayenne
- Salt & freshly milled black pepper to taste
Method
Sauté the onions, peppers and garlic in olive oil in large, heavy-bottomed pot or Dutch oven until the onions turn golden.
Stir in beef, breaking up with a wooden spoon, and cook until the beef is browned. When done, add all other ingredients to the chili mixture. You can transfer to a crock pot or continue to cook in the Dutch oven. If using a crock pot, cook for 6 to 10 hours. If staying on top of the stove, cook covered at a strong simmer for about an hour and a half. If more liquid is needed you can add water, beer, ale or red wine. Chili should be ‘to taste.’
Cornmeal and mixed seed bread

5 oz (150 g) polenta (cornmeal)
1 oz (25 g) pumpkin seeds
1 oz (25 g) sunflower seeds
1 oz (25 g) poppy seeds, reserving 1 level teaspoon for the top of the loaf
6 oz (175 g) strong white bread flour
1 rounded teaspoon salt
1 level teaspoon bicarbonate of soda
1 oz (25 g) pinhead oatmeal
1 rounded teaspoon golden caster sugar
1 large egg
10 fl oz (275 ml) buttermilk
Pre-heat the oven to gas mark 5, 375°F (190°C).
You will also need a 1 lb (450 g) loaf tin, lightly oiled.
Begin by sifting the flour, salt and bicarbonate of soda together into a large bowl, then add the polenta, all the seeds, the oatmeal and caster sugar and give everything a good mixing. Next, whisk the egg and buttermilk together, add this to the bowl and gradually stir with a wooden spoon until the mixture forms a soft and slack dough. Now just transfer the dough to the prepared loaf tin, scatter the reserved poppy seeds over and bake the loaf on the middle shelf of the oven for 50-60 minutes. The loaf is cooked when, after you’ve turned it out, it sounds hollow when you tap the underneath with your knuckles. Return it to the oven upside down, without its tin, for 5 minutes to give it a final ‘crunch’, then cool it on a wire rack.

Ingredients:
- 1 1/4 c Canola oil
- 1 3/4 c Brown sugar
- 1 Egg
- 1 ts Vanilla
- 1 c Whole wheat flour; * see

- 1/2 ts Salt
- 1/2 ts Baking soda
- 1/2 ts Baking powder
- 6 oz Chocolate chips
- 1/2 c Walnuts; coarsely chopped
- 1/2 c Coconut; shredded, optional
- 3 c Old-fashioned oatmeal
Instructions:
Preheat oven to 350ø. In a large bowl, cream together canola oil, brown
sugar and egg. Add vanilla extract, then flour, salt, baking soda and
baking powder, and mix well. Then add chocolate chips, nuts, coconut and
oatmeal. Combine these ingredients by hand or with a large wooden
spoon–the mixture will feel very stiff. If necessary, add 1/4 cup of warm
water to moisten all ingredients. Generously grease a baking sheet (or
spray with no-stick cooking spray). Use a 1/3-cup measure to drop batter in
mounds, leaving 1 to 2 inches between the mounds. Bake for 10 to 13 minutes
until cookies feel done when pressed with a finger–do not overcook or try
to brown them. Cool briefly, then use a metal spatula to remove from
cookiesheet. Serve warm or cool completely.
