Okay, so Jessica Simpson loves Tex-Mex among a few other foods and if she ever comes over for lunch this is what I’d serve her. Yes! She would too show up. Awww…You don’t think?
Tex-Mex Wraps

These delicious sandwiches are perfect for a light lunch. Black beans are mashed with salsa to form a spread for flour tortillas, and then rolled with lots of veggies and avocado sauce.
Prep Time: 15 minutes
Ingredients:
- 1 (15 ounce) can black beans, rinsed
- 1/3 cup chunky salsa
- 1 green bell pepper, thinly sliced
- 1 tomato, thinly sliced
- 1 cup shredded Cheddar cheese
- 1/2 cup shredded Pepper Jack cheese
- 1 avocado
- 1/3 cup sour cream
- 1 teaspoon lemon juice
- 4 (8 inch) flour tortillas
Preparation:
In medium bowl, place black beans and mash with a fork. Leave some beans whole for a chunky texture. Add salsa and mix well. Prepare bell pepper, tomato, and cheeses.
In small bowl, mash avocado with sour cream and lemon juice.
Spread bean mixture over tortillas and top with vegetables and cheeses. Place some avocado mixture over cheeses. Roll up sandwiches and serve.
Virgin Margarita

Ingredients:
2 tablespoons kosher (coarse) salt
1/2 lime, cut into 4 wedges
1 can (6 ounce size) frozen limeade concentrate, thawed
1/4 cup orange juice
4 cups ice cubes
Directions:
Place the salt in a shallow dish. Rub the rim of each of 4 margarita glasses with a lime wedge and dip the rims into the salt; set the lime wedges aside.
In a blender, blend the limeade, orange juice, and ice cubes on high speed for 1 to 2 minutes, or until well blended and the ice cubes are crushed.
Pour evenly into the glasses and garnish with the lime wedges. Serve immediately.
