Wicked is good, right?
Read the book forever ago and loved it so if course I’m gonna go see this. The Musical is kinda like the novel, sort of based on it, loosely anyways. Hmmm…mmmm…Is anybody else all of a sudden wicked hungry, or is it just me?
Wicked Mushrooms

Ingredients:
1 1/2 lb Mushrooms — quartered
1 tb Parsley flakes
1 md Green pepper — cut in chunks
1 md Onion – chopped
2 c — water
2 Bay leaves
1/4 ts Thyme
1 tb Low sodium tamari
1 c Burgundy wine
1/4 c Tomato paste
Fresh ground black pepper
Instructions:
Put 1/2 cup water in a large cooking pot. Add the chopped onion, bay leaves and thyme. Sauté about 5 minutes. Add chopped green pepper and mushrooms. Continue cooking about 10 minutes. Add the remaining water, Tamari, wine, tomato paste, and parsley. Add a little fresh ground pepper, if desired. Simmer slowly over low heat for at least 60 minutes, until the liquid becomes a thick sauce. Remove bay leaves. Serve very hot over brown rice or pasta.

In a medium-size pitcher, combine 2 cups chilled green tea, 2 cups chilled white grape juice (to cut sugar, use light white grape juice, made with Splenda), 6 tablespoons freshly squeezed lime juice. Stir, taste and add sugar or artificial sweetener, if needed. Rub the rim of a tall, chilled glass with a lime wedge and then press the rim into a saucer of sugar to form a thin crust. Thread lime wedges and green seedless grapes on skewers and place in glass. Add a few thin slices of lime drop in some ice and pour tea mixture over.
