Healthy Banana Pancakes

dry ingredients:

1/4 cup flaxseed meal
1/2 cup quinoa flour
1/2 cup whole wheat farina hot cereal
1 tbsp baking powder
1 tsp stevia

wet ingredients:

1 cup soy milk
1 egg
2 mashed bananas

In a medium bowl, combine dry ingredients and set aside
In a small bowl, combine wet ingredient and then stir into dry until blended (batter will be slightly lumpy)
let stand 10 minutes (very important-it will thicken)
heat griddle with non-stick cooking spray at medium temperature
pour scant 1/4 cup batter onto griddle for each pancake
cook until bubbly, turn cook until done

serve immediately

Peanut Butter Breakfast/Snack

* 1 shredded wheat biscuit

* 1-3 table spoons of peanut butter

* 1 teaspoon of vegan sugar

* 1 teaspoon of cinnamon (Optional)

Put 2 tbs. of creamy peanut butter into a cup and threw it in the microwave for 45 seconds. I then put 1 teaspoon of vegan sugar and 1 teaspoon of cinnamon into the cup with the peanut butter.

Stir this around until it is mixed together and put it back in the microwave for 15 more seconds..stir it again and then drizzle it onto one shredded wheat biscuit until the biscuit is completely covered. Then you can put it in the freezer to harden the peanut butter or just eat it like that.

White Chocolate Latte

Ingredients:

* 1 1/2 cups milk

* 1 tablespoon heavy cream or (Vegan Cream)

* 1/8 teaspoon vanilla extract

* 1 tablespoon white sugar or (Your favorite sugar substitute)

* 1/2 cup brewed espresso

* 1/4 cup white chocolate chips, or chopped (Vegan white chocolate)

Directions:

1. Combine the milk and cream in a saucepan, and whisk over high heat until hot and frothy. Remove from heat and stir in the vanilla and sugar. Whisk together hot espresso and white chocolate chips in a mug until smooth. If you are making two, pour half into another mug. Top with the frothy hot milk and stir to blend in the flavoring.
