Apple Slaw with Grape Dressing

Ingredients:
1. 1/2 cup walnut halves
2. 3/4 cup loose Concord grapes
3. 2 tablespoons walnut oil
4. 1/4 cup freshly squeezed lemon juice
5. Salt and freshly ground black pepper
6. 2 lemons cut in half
7. 6 Cortland or Granny Smith apples
8. 1 cup loose green grapes, halved and pitted
9. 1 cup loose red grapes, halved and pitted
Cooking Directions:
1. Heat oven to 350 degrees F. Spread walnuts on baking pan. Bake until fragrant, about 10 minutes. Set walnuts aside to cool.
2. Place Concord grapes in the bowl of a food processor, and puree. Pass puree through a fine sieve set over a small bowl, and discard solids. Add walnut oil and lemon juice to the bowl, and whisk to combine. Season with salt and pepper; set grape dressing aside.
3. Fill a large bowl with cold water. Squeeze lemon halves into water; add rinds. Using a mandoline or a sharp knife, julienne apples. Place apples in acidulated water. Set aside.
4. When ready to serve, drain apples. Combine apples, green and red grapes, and dressing in a large bowl; toss gently to coat. Top with reserved toasted walnuts.
If Concord grapes are not available, substitute one-fourth cup Concord grape juice combined with one-half cup red grapes.
Chicken and Grape Pita Sandwiches

Ingredients:
1 pound boneless skinless chicken breasts
½ cup plain non-fat yogurt
¼ cup reduced-fat mayonnaise
2 tablespoons fresh tarragon leaves, minced or 2 teaspoons dried tarragon leaves
2 teaspoons Dijon mustard
2 teaspoons honey
½ teaspoon black pepper
1 cup thinly sliced celery
1 cup red seedless grapes, cut into halves
1 medium head red leaf lettuce, washed
3 pita bread rounds (2 ounces each)
1. Cut chicken breasts into 1/2-inch dice. Bring 1 quart water to a boil in large saucepan. Stir in chicken. Cover; remove from heat. Let stand 6 minutes or until chicken is no longer pink in center. Rinse under cold water until cool; drain well.
2. Meanwhile, combine yogurt, mayonnaise, tarragon, mustard, honey and pepper in large bowl until blended. Add chicken, celery and grapes; stir to coat with dressing. Separate lettuce leaves. Select 6 large leaves and discard stems. Tear or shred remaining leaves.
3. Cut each pita in half crosswise; gently open. Line each half with 1 large lettuce leaf. Place handful of torn leaves and about 2/3 cup chicken mixture in each pita half.
Grape Milkshake

Ingredients:
• 250 ml Chilled milk
• 1 Cup black grapes
• 1/2 Cup sugar
• 1 Cup water
How to make Grape Milkshake:
• Separately add half-cup water to the grapes and half-cup water to sugar.
• Boil grapes for about 4 minutes till they turn soft.
• Boil sugar and water mixture to achieve one thread consistency.
• Blend softened grapes and then sieve.
• Add it to the sugar syrup and simmer for 5 minutes.
• Chill the mixture very well.
• Blend the milk and grape concentrate till frothy.
• Transfer it to glasses.
• You can top the shake with a scoop of vanilla.
• Grape Milk Shake is ready to serve.
