Lily’s in having lunch at the Alcove Cafe, then she’s gotta run to the recording studio. Work, work,work; hardly time to eat, but she has time to chat on her cell phone. Who is she talking to? It’s definitely not any of us she’s asking to join her is it? Oh, well, maybe the next time right Lily. For now, we can just order our own food, and that’s a wrap, for me at least.

Vegan Wrap (Alcove Cafe Style)
Hummus Tahini
- 2 cups of cooked chick peas
- 2 Tbsp of tahini (sesame paste - make sure the tahini is homogeneous, otherwise the oil tends to separate from the solids)
- Juice of 1 lemon
- sea salt to taste (just use a small pinch to begin)
- vegetable stock
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp cayenne pepper
Directions:
- In a food processor, blend all the ingredients except the vegetable stock. Pour in a bit of stock and blend, repeat until you have a thick smooth and creamy consistency. Refrigerate.
Grilled Portabello Mushrooms
- 2 large portobello mushroom caps
- Pasta Seasoning
- 1 1/2 Tbsp Olive Oil
- Basalmic vinegar, amount desired
Directions:
- Heat the grill.
- Clean the mushroom caps and prepare a vinaigrette by sprinkling a bit of pasta seasoning in a dish, then adding the olive oil and whisking in as much balsamic vinegar as desired.
- Drench or brush the mushroom caps with the vinaigrette. Grill the mushrooms until they are soft in the center, about 3 to 4 minutes on each side. Slice each cap on the diagonal into 1 inch strips, and let cool.
The Wrap
Directions:
- Warm the tortilla in the microwave, oven or in a skillet, long enough to make the tortilla pliable
- Prepare the warm tortilla by laying it out flat
- Spread the tortilla with home-made hummus (See the first recipe above) or with your favorite deli hummus
- Place your strips of Portabello mushroom in the center of the wrap
- Add your other ingredients
- Arugula
- Radish
- Tomato (optional)
- cucumber
- Enoki mushrooms (these tiny mushrooms are good raw, quickly stir-fired or boiled (no more than 30 seconds in boiling water)
Finish the Wrap:
- Fold the wrap
- Cut the wrap in half on the diagonal and serve.
- Ideas for Other additions: roasted red peppers,avocado, micro greens, a sprinkle of cilantro or parsley,vegan mayonnaise if you can’t live without it.
