What’s for supper Selena?

Do you kind of have the munchies right now or are you wondering what to have for lunch or trying to plan supper for later on? Maybe you’re like Selena and wish you had the magical ability to zap food into existence whenever you want. Wouldn’t that be awesome? Oh well, since that’s not going to happen I guess we are all stuck in the kitchen or racing for the nearest take-out place. Grrrrrr…Pizza again? Wait! It’s not my fault, Selena loves her cheese, mushrooms and jalapeños and she loves them on pizza. See, not my fault. But, if you’re really tired of pizza and still want to have some of Selena’s faves I found this recipe, it’s a little bit different and a whole lot yummy. Everybody happy? Yay!!!!!!

Jalapeño Pie
2 c. cheddar cheese, shredded
1 c. mozzarella cheese, shredded
Ripe olives, diced
Mushrooms, sliced
4 or 5 deseeded , jalapeños cut in strips
4 eggs
Sprinkle mozzarella & 1 c. of the cheddar on bottom of 9” pie pan (this makes the crust of the pie). Sprinkle diced ripe olives, mushrooms & jalapeños on top. SPrinkle remaining c. cheddar cheese over pie. Beat eggs and spoon on top. Bake in preheated 350 degree oven for 30 minutes.
Served 6-8
